1 cup shredded zucchini, squeeze to get excess moisture out
1 shallot diced fine
2 eggs
1/2 cup seasoned bread crumbs
1/4 cup parmesan cheese
salt and pepper to taste
Mix all ingredients and spoon into greased mini muffin tin. Bake at 400 for 15 to 18 minutes. Makes 12-16 bites.
