Here is a summertime dish I like to make even in the winter.
1 cucumber peeled and thinly sliced
1 green pepper julienned
2 Roma tomatoes julienned
1 onion thinly sliced
1/4 cup balsamic vinegar
1 - 2 Tablespoons sugar
pepper
Mix everything together and chill for at least two hours. The longer you chill it, the better it will taste. You could keep in in the fridge for up to five days. Occasionally stir while chilling.
