Make a roux by wisking together equal parts melted butter and flour.
After roux is thoroughly mixed wisk in about a cup of milk, heavy cream, or half and half.
After sauce is thickened, add in any kind of cheese you have in your fridge. I like parmesan, cheddar, Monterey Jack, American, and mozzarella. I use anywhere from 3 to 5 cheeses. It just depends on what I have on hand. Add as much cheese as you want. I never measure. I just add it until it looks and tastes cheesy enough.
Mix in salt, pepper, 1/2 teaspoon garlic and onion powder, a dash of chili powder, and a dash of nutmeg.
Add more milk if sauce seems too think.
Mix cheese sauce with any shaped short noodle.
I don't bake my macaroni and cheese. My family loves this recipe. It is ooey gooey comforting.
