Hummus: Process in the food processor the following until smooth: 15 ounce can of garbanzo beans, 1/4 cup tahini paste, juice of one lemon, 1 - 2 cloves garlic, enough water and or olive oil to make the spread smooth. Store any leftover hummus in a container in the fridge with a layer of olive oil on top of the spread to help prevent it from drying out.
Spread the wrap with hummus, top with vegetables and cheese, and roll up.
For the vegetables we like to use a red pepper cut into strips, chopped up cucumber, and lettuce. I also always double the hummus recipe because we love to have leftovers.
