5 or 6 baking potatoes cubed (leave the skin on)
olive oil
dried oregano
dried basil
dried parsley
onion powder
garlic powder
salt and pepper
I throw the potatoes in a square baking dish and top them with all the ingredients. I don't measure, but I do sprinkle the potatoes pretty heavily with the herbs. Don't be skimpy with them. I then toss to coat the potatoes. I roast them uncovered in 375 oven for 30-40 minutes. Test them with a fork for doneness.
