Couscous Salad

2 cups cooked couscous

3 Roma tomatoes

1 cucumber peeled and seeded

2 green onions

1/4 cup chopped fresh parsley

1 can garbanzo beans, drained and rinsed

juice of 2 limes

olive oil

salt and pepper to taste

1/4 feta cheese

Dice all the vegetables. Mix everything together, drizzle with a bit of olive oil, and chill. Serve as a side dish or top the salad with grilled chicken and serve as a main dish.
